In the 1960s, Dr. Max Gerson created the diet of his own when he was the Director of the Gerson Institute in Geneva, New York. In the 1930s, Dr. Gerson had developed a treatment known as chelation therapy, whereby heavy metals in the blood can be removed with colloidal sulfur. This treatment is still used today.
Dr. Gerson quickly discovered that his treatments were more successful when performed on people suffering from chronic disease. In the course of his investigations, he came to the conclusion that carbohydrates were a major cause of disease, and conducted an extensive study on the effects of various carbohydrate-rich foods and gave each group of patients an identical diet of the foods they were given.
By the end of the study, he concluded that the patients who had the least amount of carbohydrate-rich foods in their diet were the ones who recovered the best.
Following Dr. Gerson’s study, and after he became dissatisfied with the orthodox methods used to treat cancer, he developed the diet known as Gerson Therapy, a treatment that promotes healing of both internal and external disease.
In the late 1950s, Dr. Gerson began experimenting with different carbohydrate sources, and discovered that the structure of certain starches lead to the release of essential enzymes called amylase, that facilitate the digestive process.
He concluded that these starches have the ability to stimulate the pancreas to produce more enzymes, and helps to sustain a more consistent level of energy throughout the day.
